Raw Spinach and Avocado Dip

This dip is light, fresh, healthy and packs a punch. Eat it with vegetable sticks, crackers, or use it as a spread. Go nuts! ...heck, add nuts?!























Spinach and Avocado Dip
2 cups fresh baby spinach
1 medium ripe avocado
½ small white onion (on white onion relative), minced
1 glove garlic, minced
¼ cup olive oil
½ to 1 teaspoon salt (to taste)
½ teaspoon pepper
dash of cayenne, optional
*up to ¼ cup water
Optional – ¼ to ½ cup cilantro leaves

Toss all the ingredients into a food processor and pulse until incorporated. If the mixture is too dry, add water a little bit at a time until it becomes dip-like. I drizzled mine with additional olive oil and ate it with Pretzel Crisps (which I am addicted to). This is my new favorite snack.
